Would like some tips on how to avoid the white out / over exposed are on the head?

Over exposed

You have to give more information ,

Aperture and Exposer time and ISO settings etc.

The upper head is possibly overexposed because there is an area where the white is 255,255,255 (red,green,blue). The possible reason is that the dark body has forced more light than needed. To solve this you could either use exposure compensation asking for a darker image or regulate contrast at a lower level (and then using curves during editing). Another possibility is using AEL having the white head on the center of image and then compose the image you want.

Nice close up of an impreesive bird Ben. I have my C8080 permanently set to -0.3 exposure compensation and contrast set to -2 and get very few shots with overexposure.
